My father-in-law Thomas Finnerty would turn in his grave to see what
happened to his beautiful pub. He and his wife Connie ran this pub in the
1960’s |

I was at Hodder Place as an eight year
old in 1970. My parents would visit me and take me to lunch at the de Tabley
Arms in Ribchester. I still remember the boiled new potatoes with parsley.
It was the highlight of the school term. |

I first worked in the Kitchen Then the bar for some time
before going to Blackpool Catering College and continued at weekends
whilst at college. It was a very well run pub and restaurant and 3
rentable rooms.
Sunday was where the boys and parents from Stonyhurst College would come
for lunch. The Lions Club held banquets there on regular basis Wedding
functions being a popular place to be. |

I was the second chef, after I went
to work at the Hilton Hotel in Rotterdam, Holland. In 1976 Hilton Hotels
sent me to Quebec, Canada and I have lived in Canada for 40 years, now
retired for the 2 years. I remember there was a busy dinner dance on
Saturday night and I would broil 80 to 100 steak that night. |

I began as a Commis Waiter in March
1956 and was promoted to Chef de Rang in 1957. A tail suit was required.
The Head Waiter was Jimmy Kippax. I well remember John Bell the Head
Chef. He lived in a cottage across from the De Tabley on the banks of
the river Ribble. |

My Wife and I lived in Mellor and quite
frequently my parents took us to the DeTably for Dinner. I still
remember the wonderful Crepe Suzette's the Head Waiter used to make with
great flare. So sad such a nice place is no longer there for others to
enjoy as we did. |
